Yes, you can add multiple different cards.  

The default card is the card that is primarily chosen when you pay.

A default card is device specific and the first card you add to Apple Pay will become your default card automatically. Your iPhone and Apple watch can therefore have different default cards.

Absolutely, just follow these steps to select the card you want to pay with:

On an iPhone with Face ID: Double-click the right side button on your phone and wait for the default card to appear. When you see the default card, press it. You should now see all your cards that you have added to Apple Pay. Select the card you want to pay with, authenticate with Face ID by swiping your iPhone, and pay for your purchase by holding the top of your phone near the payment terminal.
